You will develop your own restaurant concept: Family style, Moderate, or Fine Dining.

You will develop your own restaurant concept: Family style, Moderate, or Fine Dining.
You will create a vision and mission statement for the business.
You will do the research for the business: demographic, SWOT, and competitive analysis and a feasibility study for your restaurant.
You will develop the menu for the restaurant: 5 appetizers, 5 main courses, 5 side dishes, 3 desserts, basic drinks and 3 signature cocktails. You will add prices and advisories to the menu raw products or allergens.
You will create a floor for the FOH (front of house) and BOH (back of house) make sure all equipment and areas are labeled. Example: Restrooms, stock room, stove, walk-in cooler.
